Baby Back Ribs with Mustard Sauce

1 / 3 cup brown sugar
1 / 4 cup onion, finely chopped
1 / 4 cup vinegar
1 / 4 cup mustard
1 / 2 teaspoon celery seed
1 / 4 teaspoon garlic powder
4 pounds pork spareribs or pork loin ribs, cut into pieces

For the sauce combine in a saucepan, brown sugar, onion, vinegar, mustard,
Celery seed and garlic powder. Bring to a boil, stirring until sugar
dissolves. Preheat grill. JobsHeat for indirect grilling. Place ribs
on grill over medium heat. Cover and grill for 1 1 / 4 to 1 1 / 2 hours or
until ribs are tender and no pink remains. Brush occasionally with the sauce
last 15 minutes of grilling.

Tropical Grilled Pork Chops

BBQ INGREDIENTS
1 clove garlic, minced
1 teaspoon paprikaPowder
1 / 4 teaspoon cayenne pepper
1 pod cardamom seeds
1 / 2 teaspoon water, or as needed
1 teaspoon vegetable oil
1 / 4 cup rice wine vinegar
1 / 2 cup sugar
1 mango - peeled, cored and chopped
1 / 4 teaspoon salt
1 / 2 tsp coriander
2 teaspoons lemon juice
1 fresh jalapeno pepper, minced
1 1 / 2 cups unsweetened applesauce
3 rings pineapple, chopped
1 pinch of white pepper
1 / 3 cup soy sauce
1 / 3 cup rice wine vinegar
6 porkChops

DIRECTIONS
Using a mortar and pestle, mash together garlic, chili powder, cayenne pepper, and cardamom. Mix enough water into a paste.

Heat the oil in a frying pan over medium heat. Stir in spice paste and cook until it begins to bubble, about 30 seconds. Stir in vinegar and cook for 2 minutes without boiling. Stir in sugar until it dissolves. Mix in mango, salt, coriander, lemon juice and jalapeno leave; simmer 20 minutes. Stir in applesauce and pineapple, simmer 10Minute more. Season with white pepper. Place in a bowl, cover and refrigerate until ready to use.

To prepare marinade, mix 2 / 3 cup salsa with soy sauce and 1 / 3 cup vinegar. Place pork chops in a large resealable plastic bag and pour marinade over the chops. Seal tightly, and in the refrigerator for 1 hour.

Prepare grill for medium to high heat. Drain marinade from bag in a saucepan and bring to a boil.
Lightly oil grill grate. Place pork chops on the hot grill. Cook10 minutes or to desired doneness, turn once while cooking and stitching, occasionally with the marinade.

Warm remaining salsa over medium-low heat. Serve pork chops topped with the salsa.
