Greek Recipes and Cuisine

Greece has a long history stretching back thousands of years, and while this story has invaded many times (including by the Ottoman Turks who occupied the country for 400 years). As a result of Greek cuisine has taken an influence from many sources, and some dishes (moussaka and baklava) are shared and have Turkish names.

Greek cuisine is not only moussaka. While lamb is a traditional meat, favors for the holidays and festivals, poultry, beef and pork are also popular.In addition to Greece, including many islands, and in which no part of the Greek mainland for more than 90 miles from the sea, fish and seafood are also Greek favorites. Greece is the climate for the cultivation of olives and lemons, both favorable, and these are an important part of Greek cuisine. Vegetables include eggplant and zucchini. Garlic, basil, oregano and thyme are widely used to add taste to meals. And finally and not least, is the famous Greek feta cheese.

Some of themost popular Greek dishes are:

- Village Salad (usually outside Greece and Cyprus as a seasoned "Greek Salad") - a salad of tomatoes, cucumbers, peppers and red onions with salt, black pepper and oregano and dressed with olive oil known. Feta cheese, capers and olives are sometimes included.

- Dips - often with pita (serves unleavened) bread - including: Hummus (chickpea dip), Melitzanosalata (eggplant dip), skordalia (garlic dip), tahini (sesame paste dip),Taramosalata (carp roe dip) and tzatziki (yogurt, cucumber and garlic dip).

- Dolmades - vine leaves with rice, vegetables and sometimes stuffed with meat.

- Keftedes - fried meatballs with oregon and mint.

- Kleftiko - lamb marinated with garlic and lemon and then slowly roasted on the bone in a pit oven.

- Cut moussaka - layers of minced meat and eggplant and tomato slices, topped with white sauce and baked.

- Souvlaki - meat, fish or shrimpspit-roasted.

- Stifado - a beef and onion stew with red wine and cinnamon.

- Baklava - a sweet pastry made of layers of phyllo dough, chopped nuts and sweetened with sugar or honey.
